The new blog!
Well here we are… a new day, and a new blog! I hope everyone likes the new format. I’m really excited about it! There are some new features (subscribing via email, etc) that I think are really nice. They’re also trying to work on bringing over my “followers” from the other site… so we’ll see if that works out. All in all I’m really happy with it and glad that I went ahead with this! I hope you all enjoy it and please send me any questions/comments on the “contact me” page!
So dinner today is going to be simple. I have pork chops in the freezer that I plan on making with a breading mix called Bakin’ Miracle that I just adore. My mother uses it and it’s my new stand-by for a simple chicken, pork, or fish dinner. My mom likes to bread tilapia, bake it, and serve it with lettuce, onion, tomato, and tartar sauce on a big kaiser roll. Mmmm… now I need to make that soon as well. But as for tonight, it’s pork chops, potatoes, and cauliflower.
For the pork, you simply dip in some lightly beaten egg, dredge in the Bakin’ Miracle, and then bake for about 40 minutes.

As for the cauliflower, I might do something simple like steam or microwave it. However, I wanted to post this “low-carb” recipe that I just love to make. My mother-in-law passed it on to me.
Cheesy Smashed Cauliflower
1/4 small onion, chopped
2 green onions, chopped
1 tbsp butter, or as needed
1/2 clove garlic, or 1/4 tsp minced garlic
1/4 c heavy cream (I use milk here)
2 oz cream cheese (I use reduced fat cream cheese)
4 oz mozzarella cheese (I use low fat or part skim)
1/8 c parmesan cheese
salt and pepper, to taste
Boil chopped cauliflower in chicken brother until almost tender. Drain and set aside. Reserve liquid.
Sautee onions until softened. When almost done, add garlic and sautee a minute or so longer. Add onion mixture to cauliflower. Add heavy cream, cream cheese, mozzarella cheese, and parmesan cheese. Mash or blend on low. Add reserved broth if too thick. Add salt and pepper to taste.
Now, for the rest of my day… I was up at 5am sending out some resumes. I dread the end of the week because it seems like no one gets back to you until Monday. I’m also hoping to take my son to the Childrens’ Museum, or the library, or somewhere that doesn’t mean the inside of our house. If only the sun would come out like it did at the end of the day yesterday, it felt like spring!
Spring.. that’s exactly what we need around here!
