Yankee Doodle..
I have no clue why this recipe is called what it is… but it’s Yankee Doodle Beef Soup and it’s delish. After a fun day with my son (yes, I admit, I’m enjoying this time being unemployed because I can spend more time with him!), I made this for my neighbor who just had a beautiful baby boy.
I started my day going for a walk to the grocery store… child in tow in the stroller and my friend and her son as well. We strolled along for about 3 miles, got groceries, stopped for Subway sandwiches, had an impromptu picnic, and then headed home to cook for my neighbor who is low on sleep, but high on baby-love! She seemed so happy and it was so exciting to meet the newest member of their family.
I brought over the following recipe, along with a big french baguette. I thought it was simple to make, but she could freeze if it needed, and it is good comfort food that reheats easily as well. This is another recipe my mother-in-law has passed along to me!
Yankee Doodle Beef Soup
1 pound ground beef
1/4 teaspoon onion salt
1/4 teaspoon oregano
1 can condensed tomato soup
1 can condensed Old Fashioned Vegetable soup
1 1/2 cans water
2 cups radiatore pasta, cooked and drained
2 tablespoons fresh parsley, chopped
grated Parmesan cheese
Brown beef with onion salt. Drain.
Add the next five ingredients (through the cooked pasta). Bring to a boil and simmer for 10 minutes.
Serve topped with fresh parsley and Parmesan cheese.

Margaret! This looks delish! I am going to try and make it here in Moscow, but not sure if I can get condensed tomato soup or old fashioned veggie soup…
