Happy Mother’s Day to all Multitasking Moms!
Happy Mother’s Day to all of you crazy, busy, happy, nutty, multitasking Moms out there!
I hope you have a wonderful day and know that no matter if you’re the Mom to a little boy or girl, or cat, or dog, or fish, or even a plant… that those you take care of love and appreciate you!
My son made me a beautiful clay pot at school (daycare) and filled it with a flower. He calls it a daisy… so, a daisy it is. I adore it, and I’m really hoping to keep it alive (I don’t have much of a green thumb).
This morning I took him to church and he also bought me a gorgeous red carnation on the way out. (Thank goodness I had that dollar in my purse).
Today we are off to the movies, after I’ve already done 2 loads of laundry, been to church, and cleaned the kitchen. So, just like most days, this one is busy.
Last night I made my “favorite” taco salad. Nothing special, but it’s just something that I like to throw together and eat whenever we feel like it. I need to note that this makes a gigando amount of taco salad. Not sure why I didn’t write that note down before. It can feed a small army. It looks like I’ll be having taco salad for breakfast tomorrow!
Margo’s Favorite Taco Salad
1 lb. extra lean ground turkey
1 packet taco seasoning mix
1 head iceberg lettuce, shredded
1 red onion, sliced
1 bunch green onions, chopped
1 can pinto beans, rinsed and drained
1 can kidney beans, rinsed and drained
2 large tomatoes, chopped
1 avocado, peeled and chopped
8 ounces shredded reduced fat cheddar cheese
1 package corn chips, 2 1/2 oz
8 oz fat free Catalina dressing
Prepare the ground turkey as directed by the taco seasoning package and set aside to cool a bit.
In a large bowl, combine the turkey mixture, lettuce, red onion, green onion, pinto beans, kidney beans, tomatoes, avocado and cheese. Mix well.
Before serving, add the dressing to coat. Mix well, top with corn chips and serve immediately.
