Mocking up one of our favorite pizzas

It’s been a heckuva Sunday.  This morning I got up at 6am to run and was so mad when I saw it was raining outside (ok, I lie… I happily crawled back under the covers for another 90 minutes of sleep!).  I took my son to church and then came home and cleaned and did some laundry.  I also made a list of things I want to get done around the house this week.  I feel like when I do find a new job, I’m going to think back and wonder why I didn’t do this or that while I was home.  So now I have a list (a mile long) of to-do’s for the week.  They range from using a new checkbook software, to cleaning under beds, to cleaning out the freezer.  We shall see how far I get!

I then attended a wake for a dear friend… that’s pretty  much all I can say about that.  I wish we could have all gotten together under better circumstances.  It’s very sad.

Then I rushed home and threw in dinner.  I planned on trying to mock up a “copycat” version of our favorite pizza place’s BBQ chicken pizza.  We adore Homemade Pizza Company. I have loved almost every pizza we’ve tried from there. However, I’m surprised because I’m not usually a fan of BBQ chicken pizza… but this one I love.

So, here’s what I did.  This morning I browned up about 1/2 lb of ground chicken.  I poured Sweet Baby Ray’s barbecue sauce on it, mixed it up, and threw it in the fridge.

This evening I unrolled a store bought dough… ruined it, cursed a bit, threw the dough ball across the room in a fit… and then opened some store-bought french bread dough and pressed it into a pan, hoping it might work out well as pizza dough (and it did just fine!.. so it’s like my small temper tantrum never happened.. sorta)

I brushed it with a little bit of the sauce and pre-baked it for 5 minutes.  Then I topped it with shredded, reduced fat mozzarella cheese, chopped fresh cilantro, red onion, and dollups of the chicken mixture (like they do at the pizza company).  I baked it for about 10 minutes or so and served it with a salad.

It turned out great.  Even my son ate it, along with the croutons from the salad of course!
