Fruit Dip

This morning I’m a bit sad.  The week already seems to be flying by.  Every chore I take on to get done before I start work seems pointless because the house gets messy again anyway.  And I’m starting to think about time away from my son and it’s making me a bit melancholy.  I keep reminding myself that this is a good thing and it’s just the next step that will lead to more good things!

I’ve been thinking about vacation already… yep, I haven’t even started working yet.  It’s just fun to think about a trip somewhere with our son.  I think another Disney trip is on the agenda, but we want to go when he is actually tall enough to ride the bigger rides, so that might have to wait a bit.  So, I’d like to start researching other destinations that are fun with family!  Feel free to leave a comment about someplace that you recommend!

Today I have a huge container of fresh strawberries, so I think I’ll make my friend’s fruit dip.  It’s super easy and delicious!  She used to bring it to our Friday potlucks we’d have at work.

Cindy’s Fruit Dip

8 oz cream cheese
1/2 c orange juice
1/4 tsp ground ginger
1 tbsp sugar

Combine all ingredients and blend until smooth. Chill before serving.

    Yum! I’ve been loving strawberries lately…fat-free Cool Whip combined with the sugar free cheesecake flavored Jell-o pudding mix with a little vanilla extract also makes a great (and somewhat figure-friendly) fruit dip.

    The dip sounds yummy! Check out my archive list. I’ve written lots about that sadness about leaving my kids in after school, summer camp, day care in general. It’s definitely hard, but you’ll get into a groove. It’s about balance. You’ll be fine.
