California Chicken Panini

I have the most wonderful contraption here at home… it’s a Cuisinart Griddler.  My husband bought it for me one Christmas and we use it more than once a week.  On Sunday mornings, we make pancakes on it with the griddle plates.  On a weeknight we use the grill plates and open it up flat and grill chicken or steak or fish.  And the other night I used the grill plates and folded it as a panini press.  For once, an appliance that I actually use and that doesn’t just take up space in my cabinet!

California Chicken Panini

4 sub rolls
2 tomatoes, sliced
1 avocado, sliced
4 slices reduced fat smoked provolone (or swiss) cheese
chicken breast trimmed from a store bought rotisserie chicken (skin removed)
garlic herb mayo (either add some minced garlic, or garlic powder, and Italian herbs to light mayonnaise, or buy some pre-made)
8 slices turkey bacon, cooked crisp
1/2 vidalia onion, sliced

Layer all ingredients on a slightly hollowed out sub roll (I scoop some of the inside dough out with my hands). Press on a preheated panini press until the bread is crisp, and the cheese inside is melted.

    I really like the flavors in this sandwich, especially the garlic herb mayo. I need to remember to swap in the griddle plates on my grill for pancakes – so convenient!
