Salads with Fruit
Fruit seems to be the “new crouton” these days in salads. It’s the trendy thing to do if you’re a salad-loving foodie. It made me think of this recipe from my mother-in-law that incorporates raisins. She brought this dish to my son’s first birthday party and it was a hit. I think it’d be a great dish to bring to a potluck.
You could lighten it up a bit with turkey bacon and light mayonnaise as well.
Broccoli, Raisin, and Bacon Salad
1 large bunch of broccoli
1 pound of bacon
1 cup golden raisins
1 cup mayonnaise
3 tablespoons sugar
2 tablespoons lemon juice
Mix mayonnaise, sugar, and lemon juice together in a small bowl. Refrigerate for a few hours to let flavors combine.
Cut up broccoli into bite-size chunks.
Brown bacon in a medium pan, drain, and chop. Set aside.
Allow raisins to sit in hot water until plumped.
Mix all together and garnish with additional chopped bacon.

Hey ISM Margo!
I love this salad! I’ve been taking a version of it to potlucks for years! I do it a bit differently…2-3 bunches of broccoli (makes a lot, but cuts the dressing down to be more WW friendly–& I do use light or fat free mayo). I use a bag of Oscar Mayer real bacon bits to cut time & mess. I also add 1/2 cup sunflower seeds, & about 1/2 cup minced onion. My dressing calls for cider vinegar in place of the lemon juice. Overall, I love the salty sunflower seeds & the kick & crunch of the onion in with the sweeter raisins & tangy dressing!

Yummy. I’m going to make this with some leftover broccoli that I have tonight. I’m the only one in my family who eats mayo, so more for me!
