Tomato Bisque
The other day a colleague asked how I fit it all in … like sleep, for instance. Well, last night after my son went to bed at 8:00 pm, I crashed on the couch about 30 minutes later. So, that answers how I fit sleep in… I apparently cannot often stay awake past 8:30 pm. I’m such the party-animal, eh?
And I’m far from perfect. I noticed there’s a spelling error in my guest-post on The Single Mothers Chronicles. I threw that in there on purpose… yeah right. Oh well, “A for effort” I suppose.
Today, after last night’s 8:30 pm bedtime, I got up and was still sleepy. However, I have 3 hours of meetings to start my day, then I want to hit the gym, then more meetings, then I need to rush out at quittin’ time so I can drive home and meet my guys for “family swim” at the YMCA that we just joined.
After that I plan on making…. wait, who am I kidding? It’ll be 7pm. So we plan on either stopping for dinner or grabbing a Homemade Pizza Company pizza. Moms can’t cook all the time!
I did make a great tomato bisque on Sunday. It called for “peeling the tomatoes” which I’ve yet to ever do before so I allowed extra time. It was easy… just score the bottom of the tomato and drop into boiling water for about 2 minutes. Then place them in ice water to cool and then peel with a paring knife. (Sounds much harder than it is).
I served this with a grilled ham & gouda sandwich with reduced fat mayo that I pureed with some basil and garlic to make a sort of “pesto spread”.

Tomato bisque is one of my favorites! I’ll have to try this!
