Crab and Grilled Corn Salad

So this weekend I was home alone with my son while my husband was on a business trip.  We packed it full of activities, errands, and everything else under the sun.  I’m pooped.  So, I’ve made a daring decision… other than a couple things that I picked up at Target (milk, frozen broccoli, and butter), I am not going to the grocery store.  You’d think I was crazy… but if you saw my cabinets full of this ‘n that with practically no room, you’d agree it’s time for me to get creative.

So, this week it’s a combo of what’s frozen and what’s in the kitchen already.  We’ll see how long I last (haha).

Last week after our trip I was craving fresh veggies.  Somehow fried cheese curds in Wisconsin didn’t scream “healthy”.  So I made this crab salad.  I made the whole recipe, and I took leftovers to work for lunches.  It was delicious!  Definitely a keeper…

Crab and Grilled Corn Salad

Yield: 6 servings (serving size: 1 1/3 cups salad and 2 lettuce leaves)
WW points: 5 per serving

6 ears shucked corn
1 cup finely chopped celery
1 cup chopped bottled roasted red bell pepper, rinsed and drained
1/2 cup chopped fresh cilantro
1/3 cup thinly sliced green onions
12 ounces lump crabmeat, shell pieces removed (I admit it!  I used imitation crab – we just happen to love the stuff!)
1/4 cup fresh lime juice
3 tablespoons canola mayonnaise (I used light mayonnaise – could cut the points a bit)
1/2 teaspoon freshly ground black pepper
3/8 teaspoon salt
1/8 teaspoon ground red pepper
12 Boston lettuce leaves

Heat a large grill pan over medium-high heat. Place corn in pan; cook 8 minutes or until slightly charred, turning frequently. Cool slightly. Cut kernels from ears of corn; place in a large bowl. Add celery and next 4 ingredients (through crabmeat) to corn; toss gently to combine.

Combine lime juice, mayonnaise, black pepper, salt, and ground red pepper in a small bowl, stirring well with a whisk. Pour dressing over crab mixture; toss gently to coat. Serve salad over lettuce leaves.
