Suprisingly – kid approved

Tonight I got home from work and tried out a “Margo original”.  I’ve been super in to wraps & sandwiches lately.  I crave breakfast sandwiches (I’ve been good and make my own healthy version and take them to work), burgers, etc.  The cafeteria at work serves up big wraps full of all sorts of things that literally talk to me from behind the counter (they say “don’t eat that lunch you packed!”… but I try not to listen).  So, tonight I decided to concoct a “Philly Cheese Steak Wrap”.

I also made a small cheese quesadilla for my son… however, he ended up eating the steak and the green peppers from my meal!  Who knew the kid would eat green peppers…. love it!  I just adore when my son surprises me!  So, this was kid-approved as well.

Philly Cheese Steak Wraps

1 lb sirloin tip steak
1 onion, sliced thin
2 small green peppers, sliced into thin strips
3 tsp olive oil, divided
1 tsp balsamic vinegar
1 tsp soy sauce (I used Bragg’s Liquid Aminos)
salt and pepper
sliced provolone cheese
large whole wheat wraps

Slice sirloin as thin as possible.  Heat 1 tsp oil in a pan until almost smoking.  Add the sirloin.  Season with salt and pepper.  Cook until browned and cooked through, about 4 minutes.  Remove from pan and set aside.  Mix 2 tsp oil, balsamic vinegar, and soy sauce in a small bowl.  Season with pepper.  Poor over sirloin and toss gently.  Cover with foil to keep warm.

Add onion and peppers to pan, cooking until softened and the onions are slightly browned.

Warm the large wrap so it is easy to bend.  (I microwaved it for a few seconds).  Top with sirloin, onion and pepper mixture, and a slice of cheese.  Wrap up (tuck the bottom up and then roll from one side to the other).  If necessary, microwave the wrap for about 10 seconds to melt the cheese.
