What a tiring weekend, and it’s all self-induced.  I’m not sure if 14 weeks of a pregnancy brings about the urge to “nest”, but I can’t stop taking on random chores throughout the house.  What I find to be difficult is the house keeps getting dirty around me as this occurs, so I have to keep cleaning as well.

I have a husband who’s sick as well, and I’ve got a scratchy throat, yet I seem to be pulling through.  One would hope that $40 prenatal vitamins could at least keep me well.

So, tonight I’m invoking Julia Child and making her Poulet Poele a l’Estragon.  I have not yet decided if I’m taking on more than I can chew.

I am still fighting my urge to run to White Castle and order a crave case (yes, like 30 of those burgers in one of those things I think) of little sliders.  So, last week I tried this recipe at home.  It’s my second attempt at sliders.  I do believe I liked the first one better, but this one is simpler.  And, I must say I like them reheated in the microwave later (the bun is softer than straight out of the oven).

Mock Sliders #2

1 lb lean ground beef
1/2 envelope onion soup mix (halving this is a bit difficult…. so I just tried my best)
1/4 c reduced fat mayonnaise
1 c reduced fat shredded cheddar cheese
12 dinner or slider rolls
dill pickle slices

Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.

Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.

Lay the bottoms of the dinner rolls on the prepared baking sheet. Spread the cheese and beef mixture on the bottom half of each roll. Top with 1 or 2 dill pickle slices. Replace the tops. Cover with another sheet of aluminum foil sprayed with cooking spray.

Bake in the preheated oven until the burgers are heated through and cheese melts, about 20 minutes.
