No-Time Pesto Pasta

No-Time… what better name for a recipe, eh?  Time is definitely something we all seem to lack.  I drive home in the dark (I’m NOT enjoying that one bit) and get home, make dinner, clean up, bathe the boy, and then it’s time for him to go to bed… unfortunately I’m asleep on the couch not long after. 

I’m about half-way through this pregnancy… which is super exciting… until you think to yourself  ”Only half way?”.  But, in all honesty it is flying by.  The holidays take up a lot of time and keep me busy as well.

But, back to being tired… on my drive home I truly think of driving through some drive-thru at a fast food place.  But then I’d have to decide what I wanted, and that takes a lot of effort!  So, I’ve been sticking to my planned dinners.

This one was good.  I think if you added some chicken, or maybe some olives, it might even have more of a Wow-factor.  But, it was quick & easy & good.  Perfect for a mid-week meal.  I saw this in Kraft Food & Family Magazine.

No-Time Pesto Pasta

serves: 4

1/2 (16-oz.) pkg. penne rigate pasta (3 cups), uncooked
1/2 cup pesto
1/2 cup chopped roasted red peppers
1/2 cup  ATHENOS Crumbled Feta Cheese with Basil and Tomato

Cook pasta as directed on package, omitting salt. Drain; return to pan.

Add pesto and peppers; cook and stir on low heat 3 to 5 min. or until heated through.

Stir in cheese.
