Broiled Tilapia Gyros
This morning I woke up, got ready for work, defrosted chicken legs, made the marinade, (making Pollo Sabroso tonight and totally forgot about it until this morning), tried to straighten up, and got my son off to daycare. I was running around like a crazy woman.
Last night, however, was enjoyable. I made this tilapia recipe for dinner, and we played “Rock Band” as a family with the XBOX. There’s nothing like playing in a band with your 3 year old on vocals for “We Will Rock You”. It was one of those moments I’d wished I had the camcorder out.
This dinner turned out great. My husband really liked it, and our only complaint was that since I tried to grill it on my indoor grill, the seasoned part of the fish kind of stuck to the grates and therefore it needed a bit of salt and pepper. Next time I’ll use the broiler as the recipe recommends.
The sauce for this is outstanding. I want to make it to have with chicken, beef, etc. It was terrific.
Note that I’m calculating Weight Watchers Points with the “new” way… following the new plan with protein, carbohydrates, fat, and fiber. I’m tagging it as “new” so that if you see an older recipe, you’ll know it’s the old way. The “new” way calculates a much higher number than what I am used to seeing, but then again you get more points per day (so I guess it comes out in the wash..).
Broiled Tilapia Gyros
serves: 4
new WW points: 12
Fish:
1 1/2 pounds tilapia fillets
1 1/2 tablespoons olive oil
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
Cooking spray
Tzatziki:
3/4 cup plain 2% reduced-fat Greek yogurt
2 teaspoons chopped fresh dill
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 garlic cloves, minced
Remaining ingredients:
4 (2.75-ounce) Mediterranean-style wheat flatbreads (***I used whole wheat pita pockets)
1/2 cup vertically sliced red onion (about 1/2 small onion)
1 ripe avocado, peeled and cut into 12 thin slices
1 medium tomato, thinly sliced
1/2 small English cucumber, thinly sliced (about 1/2 cup)
Preheat broiler.
To prepare fish, brush fish with oil; sprinkle with 1/2 teaspoon pepper and 1/4 teaspoon salt. Place fish on a broiler pan coated with cooking spray. Broil 6 minutes or until fish flakes easily when tested with a fork or desired degree of doneness.
To prepare tzatziki, combine yogurt and next 5 ingredients (through garlic) in a food processor or blender; pulse until smooth.
Spread 2 tablespoons tzatziki in the center of each flatbread. Divide fish evenly among flatbreads. Top each serving with 2 tablespoons onion, 3 avocado slices, 2 tomato slices, and about 6 cucumber slices; fold in half.
