Fajita Marinade

I’m always looking for restaurant style fajitas at home.  I made this marinade after combining ideas from several different ones I found online.  I marinated both flank steak and chicken in it (about a pound of each).  I grilled them up on my indoor grill pan.  I liked the steak best, and my husband liked the chicken best!

Fajita Marinade

This makes enough to marinate about 2 lbs of meat

1 c beer
1/2 c lime juice
4 tbsp olive oil
6 cloves garlic, crushed
1 1/2 tbsp soy sauce
2 tsp salt
1 1/2 tsp liquid smoke flavoring
1/2 tsp cayenne pepper
1 tsp ground black pepper

Combine all ingredients in a resealable plastic bag.  Marinate meat for 2 hours or overnight.  Grill meat, slice, and serve with fajita toppings and either low-carb or corn tortillas.
